Ingredients
  • 1 block extra-firm tofu, pressed and diced
  • 1/4 cup Thai peanut sauce
  • 1/2 cup arugula
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro

  • 1 tablespoon lime juice
  • 4 whole-wheat tortillas
Instructions
  1. In a large bowl, combine the tofu and Thai peanut sauce. Toss to coat.
