Ingredients
  • 1 head of butter lettuce, leaves separated
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 large sweet potato, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped cranberries
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss Brussels sprouts and sweet potato with olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for 20-25 minutes, or until tender.
  4. While the vegetables are roasting, make the sweet potato puree. Add the sweet potato cubes to a pot of boiling water and cook until tender.
  5. Drain the sweet potatoes and mash them with a fork or potato masher.
  6. To assemble the wraps, place a few Brussels sprouts and sweet potato puree on a butter lettuce leaf.
  7. Top with walnuts and cranberries.
