Ingredients
1 head of butter lettuce, leaves separated
1 pound Brussels sprouts, trimmed and halved
1 large sweet potato, peeled and cubed
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup chopped walnuts
1/4 cup chopped cranberries
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Toss Brussels sprouts and sweet potato with olive oil, salt, and pepper.
Spread on a baking sheet and roast for 20-25 minutes, or until tender.
While the vegetables are roasting, make the sweet potato puree. Add the sweet potato cubes to a pot of boiling water and cook until tender.
Drain the sweet potatoes and mash them with a fork or potato masher.
To assemble the wraps, place a few Brussels sprouts and sweet potato puree on a butter lettuce leaf.
Top with walnuts and cranberries.
