Ingredients
  • 1 bunch Swiss chard, stems removed and chopped
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup nutritional yeast
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the Swiss chard, black beans, red onion, cilantro, nutritional yeast, chili powder, cumin, salt, and black pepper.
  3. Spread the mixture evenly on a baking sheet.
  4. Roast in the preheated oven for 15-20 minutes, or until the Swiss chard is wilted and the black beans are heated through.
  5. While the burrito filling is roasting, make the Roasted Tomatillo Salsa.
  6. To make the Roasted Tomatillo Salsa: Combine the tomatillos, onion, garlic, and jalapeno on a baking sheet.
  7. Drizzle with olive oil and season with salt and pepper.
  8. Roast in the preheated oven for 15-20 minutes, or until the tomatillos are softened and slightly charred.
