Swiss Chard and Black Bean Burritos with Roasted Tomatillo Salsa

Ingredients
- 1 bunch Swiss chard, stems removed and chopped
- 1 can (15 ounces) black beans, rinsed and drained
- 1/2 cup chopped red onion
- 1/4 cup chopped cilantro
- 1/4 cup nutritional yeast
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine the Swiss chard, black beans, red onion, cilantro, nutritional yeast, chili powder, cumin, salt, and black pepper.
- Spread the mixture evenly on a baking sheet.
- Roast in the preheated oven for 15-20 minutes, or until the Swiss chard is wilted and the black beans are heated through.
- While the burrito filling is roasting, make the Roasted Tomatillo Salsa.
- To make the Roasted Tomatillo Salsa: Combine the tomatillos, onion, garlic, and jalapeno on a baking sheet.
- Drizzle with olive oil and season with salt and pepper.
- Roast in the preheated oven for 15-20 minutes, or until the tomatillos are softened and slightly charred.
