Ingredients
  • 1 cup dried lentils
  • 1 sweet potato, peeled and cubed
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
Instructions
  1. Rinse the lentils and pick over them to remove any stones or debris.
  2. Combine the lentils, sweet potato, onion, green bell pepper, red bell pepper, parsley, cumin, and coriander in a large bowl.
  3. Add enough water to cover the ingredients by about 1 inch.
  4. Bring the mixture to a boil over medium heat, then reduce heat to low and simmer for 20 minutes, or until the lentils are tender.
  5. Drain the lentils and transfer them to a food processor.
  6. Process the lentils until they are finely chopped.
  7. Form the lentil mixture into patties.
  8. Heat a large skillet over medium heat and add a little oil.
  9. Cook the patties for 4-5 minutes per side, or until they are golden brown and cooked through.
