Ingredients
  • 1 cup brown rice
  • 1 cup quinoa
  • 1 cup vegetable broth
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped mango
  • 1/2 teaspoon chopped habanero pepper
Instructions
  1. Combine the brown rice, quinoa, and vegetable broth in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the liquid has been absorbed.
  2. Mash the beans in a large bowl.
  3. Add the cooked rice mixture, onion, green bell pepper, red bell pepper, mango, and habanero pepper to the bowl. Mix well.
  4. Form the mixture into 4 patties.
  5. Cook the patties in a nonstick skillet over medium heat for 5 minutes per side, or until golden brown.
  6. Serve on buns with your favorite toppings.
