Ingredients
  • 1 large zucchini
  • 1/2 cup sun-dried tomatoes
  • 1/4 cup chopped onion
  • 1/4 cup chopped fresh parsley

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Cut zucchini into thin ribbons using a mandoline slicer.
  3. Toss zucchini with olive oil and spread in a single layer on a baking sheet.
  4. Roast for 10-15 minutes, or until tender.
  5. In a large bowl, combine sun-dried tomatoes, onion, parsley, flaxseed, tahini, salt, and pepper.
  6. Add roasted zucchini and toss to coat.
  7. Form into burgers and serve on whole-wheat buns.
