Ingredients
1 large zucchini

Instructions
Preheat oven to 400 degrees F (200 degrees C).
Cut zucchini into thin ribbons using a mandoline slicer.
Toss zucchini with olive oil and spread in a single layer on a baking sheet.
Roast for 10-15 minutes, or until tender.
In a large bowl, combine sun-dried tomatoes, onion, parsley, flaxseed, tahini, salt, and pepper.
Add roasted zucchini and toss to coat.
Form into burgers and serve on whole-wheat buns.
