Creamy Butternut Squash and Spinach Green Veggie Burgers

I've always been a fan of veggie burgers, but I've never been able to find one that I really love. They're either too dry, too bland, or too mushy. Ingredients
  • 1 butternut squash, peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup packed fresh spinach
  • 1/2 cup almond flour
  • 1/4 cup nutritional yeast
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss butternut squash with olive oil, salt and pepper and spread on a baking sheet.
  3. Roast in preheated oven for 40 minutes, or until tender.
  4. While butternut squash is roasting, saute onion and garlic in a pan with a bit of olive oil until softened.
  5. In a bowl, combine roasted butternut squash, sauteed onion and garlic, spinach, almond flour, nutritional yeast, oregano, salt, and pepper. Mix well.
  6. Form into eight patties.
  7. Heat a large skillet over medium heat. Cook patties for 4-5 minutes per side, or until browned.
  8. Serve on buns with your favorite toppings.
