Creamy Roasted Cauliflower and Leek Green Veggie Burgers

Ingredients
1 head cauliflower, roasted
1 cup leeks, roasted
1 cup cashews, soaked
1/2 cup nutritional yeast
1/4 cup almond flour
1/4 cup oats
1 tablespoon olive oil
1 tablespoon lemon juice
Instructions
Preheat oven to 400 degrees F (200 degrees C).
Roast cauliflower and leeks on a baking sheet for 20 minutes, or until tender.
In a food processor, combine roasted cauliflower, leeks, cashews, nutritional yeast, almond flour, oats, olive oil, and lemon juice. Process until mixture is smooth.
Form mixture into patties.
Heat a large skillet over medium heat. Add patties and cook for 4-5 minutes per side, or until golden brown.
Serve on buns with your favorite toppings.
