Ingredients
  • 1 head cauliflower, roasted
  • 1 cup leeks, roasted
  • 1 cup cashews, soaked
  • 1/2 cup nutritional yeast
  • 1/4 cup almond flour
  • 1/4 cup oats
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Roast cauliflower and leeks on a baking sheet for 20 minutes, or until tender.
  3. In a food processor, combine roasted cauliflower, leeks, cashews, nutritional yeast, almond flour, oats, olive oil, and lemon juice. Process until mixture is smooth.
  4. Form mixture into patties.
  5. Heat a large skillet over medium heat. Add patties and cook for 4-5 minutes per side, or until golden brown.
