Ingredients
  • 1 large sweet potato, peeled and cubed
  • 1 cup cooked quinoa
  • 1 cup chopped fresh spinach

Instructions
  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, salt, and pepper.
  3. Spread sweet potato cubes on a baking sheet and roast for 25 minutes, or until tender.
