Ingredients
  • 1 large zucchini
  • 2 large carrots
  • 1 large bell pepper, any color
  • 1/2 cup bread crumbs
  • 1/2 cup grated Parmesan cheese

  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Line a baking sheet with parchment paper.
  3. Cut the zucchini, carrots, and bell pepper into long, thin ribbons.
  4. In a large bowl, combine the zucchini, carrots, bell pepper, bread crumbs, Parmesan cheese, eggs, parsley, salt, and pepper.
  5. Place the mixture on the prepared baking sheet and press it into a patty shape.
