Ingredients
  • 1 large butternut squash, peeled and cut into 1-inch cubes
  • 1 apple, peeled and cut into 1-inch cubes
  • 1 onion, chopped
  • 1/2 cup chopped walnuts
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a large bowl, combine the butternut squash, apple, onion, walnuts, parsley, basil, olive oil, salt, and pepper.
  3. Spread the mixture evenly onto a baking sheet.
  4. Roast in the preheated oven for 20-25 minutes, or until the squash is tender and the apple is golden brown.
  5. Remove from the oven and let cool slightly.
  6. Form the mixture into 4-6 patties.
  7. Heat a large skillet over medium heat.
  8. Cook the patties for 3-4 minutes per side, or until golden brown and heated through.
