Tropical Mango and Pineapple Green Veggie Burgers
These tropical veggie burgers are a delicious and healthy way to enjoy your favorite summer flavors. They're made with a combination of cooked brown rice, broccoli florets, grated carrots, chopped red bell pepper, mango, pineapple, cilantro, and nutritional yeast. The burgers are grilled to perfection and served on buns or lettuce wraps.
I first developed this recipe a few years ago when I was looking for a way to use up some leftover brown rice. I had some broccoli, carrots, and bell pepper in the fridge, so I decided to throw them all together in a bowl and see what happened. The result was surprisingly delicious! The burgers were moist and flavorful, and they held together well on the grill. I've been making them ever since.

Why It Works
  • The combination of brown rice, vegetables, and fruit gives these burgers a great balance of flavors and textures.
  • The nutritional yeast adds a cheesy flavor and helps to bind the burgers together.
  • Grilling the burgers gives them a slightly smoky flavor and helps to keep them moist.
