Zesty Lime and Cilantro Green Veggie Burgers
These zesty lime and cilantro green veggie burgers are a healthy and delicious alternative to traditional beef burgers. They are made with a combination of grated zucchini, baby spinach, cooked brown lentils, chopped red onion, fresh cilantro, lime juice, ground cumin, salt, and black pepper. The inspiration for these veggie burgers came to me one day when I was looking for a healthy and delicious alternative to traditional beef burgers. Ingredients
  • 1 zucchini, grated
  • 80g baby spinach
  • 1/2 cup brown lentils, cooked
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Combine all of the ingredients in a bowl and mix well.
  2. Form the mixture into 4 patties.
  3. Heat a little olive oil in a frying pan over medium heat.
  4. Cook the patties for 3-4 minutes per side, or until they are cooked through.
  5. Serve on buns with your favorite toppings.
  6. Enjoy!
