Ingredients
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 1 cup shredded zucchini
  • 1 cup shredded carrots
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup Thai peanut sauce
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, mash the black beans and chickpeas until they are mostly smooth.
  3. Stir in the zucchini, carrots, onion, red bell pepper, cilantro, and peanut sauce.
  4. Form the mixture into 8 patties.
  5. Place the patties on a baking sheet and bake for 20 minutes, or until they are browned and cooked through.
