The inspiration for these veggie burgers came to me on a trip to the Mediterranean. I was visiting a small village in Greece, and I had the opportunity to try some of the local cuisine. One of the dishes I tried was a simple veggie burger, made with local vegetables and herbs. I was so impressed with the flavor of the burger that I decided to recreate it when I got home.
