This tangy and spicy dressing is the perfect accompaniment to grilled fish, chicken, or shrimp, or as a marinade for grilled vegetables. It's also great as a salad dressing or dipping sauce for chips or crudités.
I first developed this dressing a few years ago when I was looking for a way to add some brightness and heat to my grilled fish. I had some fresh limes and jalapeños on hand, and I thought they would be a great combination. I started by whisking together the olive oil, lime juice, and jalapeño, and then I added some chopped cilantro and ground cumin. I tasted it and it was good, but it needed a little something extra. I added a bit of salt and black pepper, and it was perfect.I've been making this dressing ever since, and it's always a hit with my friends and family. It's the perfect balance of tangy, spicy, and herbaceous, and it really brightens up any dish.

Why It Works
The olive oil provides a rich, fruity flavor that complements the bright acidity of the lime juice.
The jalapeño pepper adds a nice kick of heat, but it's not overpowering.
The cilantro adds a fresh, herbaceous flavor that rounds out the dressing.
The ground cumin adds a warm, earthy flavor that complements the other ingredients perfectly.
The salt and black pepper help to balance out the flavors and add depth.
