Tangy Lime and Jalapeño Dressing
This tangy and spicy dressing is the perfect accompaniment to grilled fish, chicken, or shrimp, or as a marinade for grilled vegetables. It's also great as a salad dressing or dipping sauce for chips or crudités.
I first developed this dressing a few years ago when I was looking for a way to add some brightness and heat to my grilled fish. I had some fresh limes and jalapeños on hand, and I thought they would be a great combination. I started by whisking together the olive oil, lime juice, and jalapeño, and then I added some chopped cilantro and ground cumin. I tasted it and it was good, but it needed a little something extra. I added a bit of salt and black pepper, and it was perfect.I've been making this dressing ever since, and it's always a hit with my friends and family. It's the perfect balance of tangy, spicy, and herbaceous, and it really brightens up any dish.

Ingredients
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lime juice
  • 1 jalapeño pepper, seeded and finely diced
  • 1/2 cup chopped fresh cilantro leaves
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
Instructions
  1. In a small bowl, whisk together the olive oil, lime juice, jalapeño, cilantro, cumin, salt, and pepper until well combined.
  2. Taste and adjust seasonings as desired.
  3. Transfer the dressing to a jar or dressing container and refrigerate for at least 30 minutes to allow the flavors to meld.
  4. Shake well before using.
