Ingredients
1 cup raw cashews
1 cup packed fresh basil leaves
1/2 cup fresh parsley leaves
1/4 cup olive oil
1/4 cup lemon juice
1/4 cup chopped sun-dried tomatoes
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a small skillet place the cashews over medium heat.
Toast, stirring occasionally, until fragrant and light golden brown, about 5 minutes. Let cool.
Meanwhile, combine the basil, parsley, olive oil, lemon juice, sun-dried tomatoes in a blender and season with salt and black pepper
Add the cooled cashews and blend until smooth, for about 1 minute.
