Dairy-Free Alfredo Sauce

Alfredo sauce is a classic Italian sauce that is typically made with butter, cream, and Parmesan cheese. However, this dairy-free version is just as delicious and creamy, but it's also vegan and gluten-free. I first developed this recipe when I was looking for a dairy-free Alfredo sauce that I could use on my favorite pasta dishes. I experimented with a few different ingredients and came up with this recipe, which is now my go-to Alfredo sauce.

Ingredients
  • 1 cup raw cashews, soaked for at least 4 hours
  • 1/2 cup nutritional yeast
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup vegetable broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Drain the cashews and rinse them well.
  2. Add the cashews, nutritional yeast, olive oil, lemon juice, vegetable broth, garlic powder, salt, and black pepper to a blender.
  3. Blend until smooth and creamy.
  4. Taste and adjust seasonings as desired.
  5. Serve over your favorite pasta, vegetables, or as a dip.
