Hearty Lentil and Roasted Green Salad

Ingredients
  • 1 cup green lentils, rinsed and sorted
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 head of broccoli, cut into florets
  • 1 red bell pepper, chopped
  • 1/2 cup chopped fresh parsley
  • 1/4 cup lemon juice
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Toss broccoli and bell pepper with olive oil and season with salt and pepper.
  3. Spread on a baking sheet and roast in the preheated oven for 15-20 minutes, or until tender.
  4. While the vegetables are roasting, cook the lentils according to package directions.
  5. Drain lentils and let cool slightly.
  6. Combine lentils, roasted vegetables, onion, garlic, parsley, lemon juice, salt, and pepper in a large bowl.
  7. Toss to combine and serve immediately.
