Quinoa, Edamame, and Brussels Sprout Green Salad

Ingredients
  • 1 cup quinoa
  • 2 cups water
  • 1 cup edamame, shelled
  • 1 cup Brussels sprouts, thinly sliced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
Instructions
  1. Rinse the quinoa in a fine-mesh sieve until the water runs clear.
  2. Combine the quinoa and water in a medium saucepan and bring to a boil.
  3. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked through and the water has been absorbed.
  4. Fluff the quinoa with a fork and set aside to cool slightly.
  5. In a large bowl, combine the quinoa, edamame, Brussels sprouts, red onion, and cilantro.
  6. Whisk together the olive oil, lemon juice, salt, and pepper in a small bowl.
  7. Pour the dressing over the salad and toss to coat.
  8. Serve immediately.
