Ingredients
  • 1 head of romaine lettuce, chopped
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup thinly sliced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1/4 cup roasted peanuts
  • 1/4 cup crumbled tofu
Instructions
  1. In a large bowl, combine the lettuce, carrots, cucumber, red onion, cilantro, mint, peanuts, and tofu.
  2. Whisk together the dressing ingredients in a small bowl.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve immediately.
