Ingredients
  • 1 green apple, cored and sliced
  • 2 cups fresh spinach

  • 2 cups vegetable broth
  • 1/4 cup water
  • 1 tablespoon lemon juice
Instructions
  1. In a large saucepan, sauté onion in olive oil until golden.
  2. Add garlic and sauté for 30 seconds more.
  3. Add apples, celery, spinach and broth.
  4. Season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes, or until apples are tender.
  6. Remove from heat and stir in lemon juice.
  7. Blend soup until smooth. Serve warm.
  8. Garnish with fresh parsley, if desired.
