Roasted Broccoli and Butternut Squash Soup

Ingredients
  • 1 head of broccoli, cut into florets
  • 1 butternut squash, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 cups vegetable broth
Instructions
  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Toss the broccoli, butternut squash, onion, garlic, cumin, cinnamon, and nutmeg with olive oil. Spread on a baking sheet and roast for 20 minutes, or until the vegetables are tender.
  3. Transfer the roasted vegetables to a large pot. Add the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes, or until the vegetables are very soft.
  4. Use an immersion blender to puree the soup until smooth. Or, let cool slightly and transfer to a regular blender and puree until smooth.
  5. Season with salt and pepper to taste.
