Ingredients
  • 1 large cucumber, peeled and sliced
  • 1 bunch celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
Instructions
  1. In a large pot or Dutch oven, sauté the onion and garlic in a little olive oil until softened.
  2. Add the cucumber, celery, oregano, and vegetable broth to the pot.
  3. Bring to a boil, then reduce heat and simmer until the vegetables are tender, about 15 minutes.
  4. Season with salt and pepper to taste.
  5. Serve warm or chilled.
