Ingredients
  • 1 cup cooked quinoa
  • 1 cup chopped vegetables (such as bell pepper, carrot, or cucumber)

  • 1/4 cup chopped fresh herbs (such as cilantro or parsley)
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 rice paper wrappers
Instructions
  1. In a large bowl, combine the quinoa, vegetables, hummus, herbs, cumin, salt, and pepper.
  2. Soak the rice paper wrappers in warm water for a few seconds, until they are pliable.
  3. Place a small amount of the quinoa mixture in the center of each rice paper wrapper.
  4. Fold the bottom edge of the wrapper over the filling.
  5. Fold the left and right edges of the wrapper over the filling.
  6. Roll the wrapper up tightly, starting from the bottom.
  7. Repeat steps 2-6 with the remaining wrappers and filling.
  8. Serve immediately, or store in the refrigerator for later.
  9. You can also bake the bites at 350 degrees Fahrenheit for 10-12 minutes, or until they are golden brown.
