These low-FODMAP chocolate chip cookie bars are the perfect treat for those following a low-FODMAP diet. They're made with a gluten-free flour blend, light brown sugar, granulated sugar, baking soda, salt, vegan butter, almond butter, an egg, vanilla extract, and dairy-free chocolate chips. Ingredients
  • 1 cup gluten-free flour blend
  • 1/2 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegan butter, softened
  • 1/4 cup almond butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup dairy-free chocolate chips
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Line an 8x8 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the butter, almond butter, and granulated sugar. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Stir in the chocolate chips.
  6. Press the dough into the prepared baking pan.
  7. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the bars to cool before cutting into squares.
  9. Serve and enjoy!
