Ingredients
  • 1 1/2 cups oat flour
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 2 eggs
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup raisins (optional)
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Line a muffin tin with paper liners.
  3. In a large bowl, whisk together the oat flour, almond flour, honey, eggs, coconut oil, vanilla extract, baking soda, and salt.
  4. Fold in the walnuts and raisins, if desired.
  5. Fill the prepared muffin cups 2/3 full.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
