Ingredients
  • 1 pound gluten-free pasta
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1 cup low FODMAP Alfredo sauce
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
Instructions
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the onion and cook until softened, about 5 minutes.
  4. Add the garlic and cook for 1 minute more.
  5. Stir in the chicken and Alfredo sauce. Bring to a simmer and cook for 5 minutes, or until the chicken is heated through.
  6. Drain the pasta and add it to the skillet with the chicken mixture.
  7. Stir in the Parmesan cheese and parsley. Season with salt and pepper to taste.
  8. Serve immediately.
