These simple FODMAP-friendly meatballs are the perfect weeknight meal. They're made with ground turkey or chicken, almond flour, and Parmesan cheese, and they're simmered in a low-FODMAP marinara sauce. The meatballs are moist and flavorful, and the sauce is rich and tangy. Serve them with your favorite low-FODMAP pasta or rice.
I developed this recipe a few years ago when I was first diagnosed with IBS. I was struggling to find recipes that were both low-FODMAP and delicious, and I was getting really tired of eating the same old boring meals. One day, I decided to experiment with making my own meatballs, and these were born. They were a hit with my family and friends, and I've been making them ever since.
Prep time: 15 | Cook time: 25 | Serves: 4
Ingredients
1 lb ground turkey or chicken
1 egg
1/2 cup almond flour
1/2 cup grated parmesan cheese
1/2 cup chopped onion
1/4 cup chopped parsley
2 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 cup low-FODMAP Marinara sauce
1 tablespoon olive oil
Instructions
Preheat oven to 375°F.
In a bowl, combine turkey, egg, almond flour, parmesan, onion, parsley, garlic, and Italian seasoning.
Stir until well combined.
Shape the mixture into 1-inch meatballs.
Heat the olive oil in a large skillet over medium heat.
Brown the meatballs on all sides.
Pour the marinara sauce over the meatballs.
Bring to a simmer and cook for 15 minutes.
Transfer the skillet to the oven and bake for an additional 10 minutes.
Serve with your favorite low-FODMAP pasta or rice.
Why It Works
The almond flour gives the meatballs a nice texture and helps them to hold together.
The Parmesan cheese adds a rich, salty flavor.
The marinara sauce is simmered for a long time, which allows the flavors to develop and deepen.
Baking the meatballs in the oven helps to keep them moist and juicy.
