Ingredients
  • 1 1/3 cups gluten-free flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup packed brown sugar
  • 1/2 cup Lakanto Zero Calorie Golden Sweetener
  • 1 cup mashed ripe bananas
  • 1/2 cup unsweetened almond milk
  • 2 large eggs, whisked
  • 1/2 tsp vanilla extract
  • 1/2 cup chopped walnuts
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan and set aside.
  2. In a medium bowl, whisk together the gluten-free flour, baking soda, and salt.
  3. In a large bowl, whisk together the brown sugar, sweetener, eggs, almond milk, and vanilla extract.
  4. Mash the bananas in a separate bowl and add to the wet ingredients.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped walnuts.
  7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes before removing to a wire rack to cool completely.
  9. Slice and serve.
