As I have embarked on my global culinary journey, I've encountered myriad variations on the original theme. Some of my favorites contain anchovies or capers. One popular version in Argentina uses chopped green tomatoes. In Uruguay, the national chimichurri recipe often contains chopped hard-boiled eggs. A cilantro-based chimichurri is popular in Venezuela; a similar version replaces the parsley with watercress. The possibilities are endless. The recipe I'm sharing with you today is my own take on chimichurri. It's a bit simpler than traditional chimichurri, but it's just as flavorful. I've omitted the red wine vinegar, which can be a bit overpowering, and I've added a touch of honey to balance out the acidity of the lemon juice. The result is a bright and flavorful sauce that's perfect for any grilled dish.

Ingredients
