Sweet and Sour Tamari Sauce
This versatile tamari-based sauce can be used as a marinade, dipping sauce, or stir-fry sauce. It's got the perfect balance of sweet, sour, and spicy, and it's so easy to make. You can adjust the heat level to your liking, and you can also add other ingredients to taste, such as sesame seeds, chopped peanuts, or a bit of lime juice.
I first developed this sauce a few years ago when I was looking for a healthy alternative to store-bought teriyaki sauce. I wanted something that was flavorful and versatile, but also low in sodium and sugar. After a few experiments, I came up with this recipe, and it's quickly become one of my favorites. Ingredients
  • 1/2 cup tamari or coconut aminos
  • 1/4 cup rice vinegar
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon finely chopped fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes, or to taste
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 1 tablespoon toasted sesame oil
Instructions
  1. In a small saucepan over medium heat, whisk together the tamari, vinegar, maple syrup, ginger, garlic, and red pepper flakes.
  2. Bring to a boil, then reduce heat and simmer for 5 minutes, or until the sauce has thickened slightly.
  3. In a small bowl, whisk together the cornstarch and water until smooth.
  4. Add the cornstarch mixture to the saucepan and cook, stirring constantly, until the sauce has thickened to your desired consistency.
  5. Remove from heat and stir in the sesame oil.
