Ingredients
1 cup loosely packed fresh basil leaves
1/2 cup extra virgin olive oil
1/2 cup pine nuts
2 cloves garlic
1/2 teaspoon sea salt
1/4 teaspoon ground black pepper
Instructions
Preheat oven to 350°F (175°C).
Spread pine nuts on a baking sheet and toast in preheated oven for 5-7 minutes, or until golden brown.
Bring a large pot of salted water to a boil. Add basil leaves and cook for 30 seconds, or until wilted.
Drain basil leaves and plunge into a bowl of ice water to stop the cooking process.
Drain basil leaves again and pat dry.
Add basil leaves, toasted pine nuts, garlic, salt, and pepper to a food processor or blender.
Pulse until finely chopped.
With the motor running, slowly drizzle in olive oil until pesto reaches desired consistency.
Transfer pesto to a jar or container and store in the refrigerator for up to 3 days.
