Ingredients
  • 1 cup gluten-free flour blend
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/4 cup coconut oil, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup Enjoy Life chocolate chips
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Line a baking sheet with parchment paper.
  3. In a medium bowl, whisk together the flour blend, brown sugar, granulated sugar, baking soda, and salt.
  4. In a large bowl, cream together the butter, coconut oil, egg, and vanilla until light and fluffy.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are just beginning to brown.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
