Ingredients
  • 1 1/2 cups almond flour
  • 1/2 cup coconut sugar
  • 1/4 cup melted coconut oil

  • 2 tablespoons finely grated orange zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped almonds
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square baking pan.
  2. In a medium bowl, whisk together the almond flour, coconut sugar, baking powder, baking soda, and salt.
  3. In a large bowl, whisk together the eggs, orange juice, and orange zest.
  4. Add the dry ingredients to the wet ingredients and whisk until just combined.
  5. Stir in the chopped almonds.
  6. Pour the batter into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
