  • 1 teaspoon vanilla extract
  • 1/2 teaspoon xanthan gum
  • 1/4 cup dairy-free chocolate chips (optional)
  • Pinch of sea salt, for garnish
Instructions
  1. In a medium saucepan, combine the coconut milk, granulated sugar, brown sugar, salt, and vanilla extract.
  2. Bring to a simmer over medium heat, stirring constantly.
  3. Reduce heat to low and simmer for 10 minutes, or until the mixture has thickened slightly.
  4. Remove from heat and stir in the xanthan gum.
  5. Allow the mixture to cool for 5 minutes.
  6. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
