Ingredients
1 cup heavy cream
1/2 cup dark chocolate, finely chopped
1/4 cup granulated sugar
1 egg white
1/4 teaspoon cream of tartar
1/8 teaspoon vanilla extract
Instructions
In a medium saucepan, heat the heavy cream over medium heat until it is just simmering.
Remove the saucepan from the heat and add the chopped chocolate. Whisk until the chocolate is melted and smooth.
In a clean bowl, whisk together the egg white and cream of tartar until stiff peaks form.
Gradually whisk the sugar into the egg whites until they are glossy and stiff.
Gently fold the whipped egg whites into the chocolate mixture until just combined.
Divide the mousse among four serving glasses or ramekins.
Refrigerate for at least 2 hours before serving.
Top with whipped cream or berries, if desired.
