This dip was inspired by a trip to Greece, where I had the pleasure of tasting a similar dish. I was so impressed by the combination of flavors that I knew I had to recreate it at home. After some experimentation, I came up with this recipe, which I believe is even better than the original. The dip is creamy and flavorful, with a perfect balance of spinach, feta, and lemon. It's the perfect appetizer for any party or gathering.

Ingredients
1 tablespoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
2 cups fresh spinach, chopped
1/2 cup low FODMAP red pepper, diced
1/2 cup crumbled feta cheese
1/2 cup Greek yogurt
1/4 cup lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the onion and cook until softened, about 5 minutes.
Add the garlic and cook for 1 minute more.
Add the spinach and cook until wilted, about 3 minutes.
Stir in the red pepper, feta cheese, Greek yogurt, lemon juice, oregano, salt, and pepper.
Bring to a simmer and cook for 5 minutes, stirring occasionally.
Serve immediately or chill for later.
Why It Works
