Creamy Spinach and Feta Dip
A creamy and flavorful dip that's perfect for any occasion.
This dip was inspired by a trip to Greece, where I had the pleasure of tasting a similar dish. I was so impressed by the combination of flavors that I knew I had to recreate it at home. After some experimentation, I came up with this recipe, which I believe is even better than the original. The dip is creamy and flavorful, with a perfect balance of spinach, feta, and lemon. It's the perfect appetizer for any party or gathering.

Ingredients
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • 1/2 cup low FODMAP red pepper, diced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup Greek yogurt
  • 1/4 cup lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
Instructions
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and cook until softened, about 5 minutes.
  3. Add the garlic and cook for 1 minute more.
  4. Add the spinach and cook until wilted, about 3 minutes.
  5. Stir in the red pepper, feta cheese, Greek yogurt, lemon juice, oregano, salt, and pepper.
  6. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  7. Serve immediately or chill for later.
Why It Works
  • The combination of spinach, feta, and lemon is a classic for a reason. The spinach provides a fresh and earthy flavor, the feta adds a salty and tangy note, and the lemon brightens up the dish.
  • The dip is cooked in a skillet until the spinach is wilted and the flavors have had a chance to meld together. This gives the dip a rich and complex flavor.
  • The dip is served immediately or chilled for later. I prefer to serve it immediately, as I find that the flavors are at their best when the dip is warm. However, the dip can also be chilled for later and reheated before serving.
