Ingredients
  • 1 pound shrimp, peeled and deveined
  • 1 cup shredded unsweetened coconut
  • 1/2 cup gluten-free bread crumbs
  • 1/4 cup chopped cilantro
  • 1/4 cup olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sweet chili sauce
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a shallow dish, combine the coconut, bread crumbs, cilantro, olive oil, garlic powder, onion powder, salt, and pepper.
  3. Dip each shrimp in the coconut mixture, making sure to coat it evenly.
  4. Place the shrimp on a baking sheet and bake for 10-12 minutes, or until shrimp is cooked through.
