Baked Coconut Shrimp with Sweet Chili Sauce

Ingredients
- 1 pound shrimp, peeled and deveined
- 1 cup shredded unsweetened coconut
- 1/2 cup gluten-free bread crumbs
- 1/4 cup chopped cilantro
- 1/4 cup olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sweet chili sauce
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- In a shallow dish, combine the coconut, bread crumbs, cilantro, olive oil, garlic powder, onion powder, salt, and pepper.
- Dip each shrimp in the coconut mixture, making sure to coat it evenly.
