Ingredients
  • 1 block firm tofu, drained and pressed
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound asparagus, trimmed
  • 1 cup quinoa, rinsed and drained
  • 2 cups vegetable broth
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a shallow dish, combine the olive oil, lemon zest and juice, oregano, thyme, salt, and pepper.
  3. Add the tofu to the marinade and turn to coat.
  4. Bake the tofu for 20 minutes, or until golden brown and crispy.
  5. While the tofu is baking, steam the asparagus until tender.
  6. Cook the quinoa according to the package directions.
  7. Serve the tofu with the asparagus and quinoa.
