Ingredients
  • 1 tablespoon Fody Foods low-FODMAP garlic-infused olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2.5 pounds pork roast
  • 1 pound carrots, peeled and cut into 2-inch pieces
  • 1 pound parsnips, peeled and cut into 2-inch pieces
  • 1 cup chicken broth
Instructions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a small bowl, combine the garlic-infused olive oil, Dijon mustard, thyme, sage, salt, and pepper.
  3. Rub the spice mixture all over the pork roast.
  4. Place the pork roast in a roasting pan with the carrots and parsnips.
  5. Pour the chicken broth into the roasting pan.
  6. Cover the roasting pan and roast in the preheated oven for 2 hours, or until the pork is cooked through.
  7. Uncover the roasting pan and roast for an additional 30 minutes, or until the vegetables are browned.
  8. Remove the pork roast from the roasting pan and let rest for 10 minutes before slicing.
  9. Serve the pork roast with the roasted carrots and parsnips and the pan juices.
