Savory Halloumi and Grilled Peach Delight Salad

Ingredients
  • 1 tablespoon olive oil
  • 1 pound halloumi cheese, cut into 1-inch cubes
  • 2 ripe peaches, pitted and cut into 1-inch wedges
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup chopped fresh basil
  • 1/4 cup balsamic vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat a grill or grill pan over medium-high heat.
  2. Brush the halloumi cubes and peach wedges with olive oil.
  3. Grill the halloumi for 3-4 minutes per side, or until golden brown and slightly softened.
  4. Grill the peach wedges for 2-3 minutes per side, or until slightly charred and softened.
  5. Transfer the halloumi and peaches to a large bowl.
  6. Add the red onion and basil to the bowl and toss to combine.
  7. Drizzle the balsamic vinegar, salt, and pepper over the salad and toss to coat.
  8. Serve immediately.
