Lemon-Dill Baked Cod with Roasted Vegetables

Ingredients
- 1 pound cod fillets
- 1 tablespoon olive oil
- 1 teaspoon dried dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, zested and juiced
- 1/2 pound baby potatoes, halved
- 1/2 pound broccoli florets
- 1/2 pound carrots, sliced
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, combine the cod, olive oil, dill, salt, and pepper. Toss to coat.
- In a separate bowl, toss the potatoes, broccoli, and carrots with the remaining olive oil, salt, and pepper.
- Spread the vegetables in a single layer on a baking sheet.
- Place the cod fillets on top of the vegetables.
- Bake for 15-20 minutes, or until the cod is cooked through and the vegetables are tender.
- Remove from oven and sprinkle with lemon zest, lemon juice, and parsley.
- Serve immediately.
