Ingredients
  • 1 pound cod fillets
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lemon, zested and juiced
  • 1/2 pound baby potatoes, halved
  • 1/2 pound broccoli florets
  • 1/2 pound carrots, sliced
  • 1 tablespoon chopped fresh parsley
Instructions
  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine the cod, olive oil, dill, salt, and pepper. Toss to coat.
  3. In a separate bowl, toss the potatoes, broccoli, and carrots with the remaining olive oil, salt, and pepper.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Place the cod fillets on top of the vegetables.
  6. Bake for 15-20 minutes, or until the cod is cooked through and the vegetables are tender.
  7. Remove from oven and sprinkle with lemon zest, lemon juice, and parsley.
  8. Serve immediately.
