Ingredients
  • 8 ounces dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • 1 tablespoon light corn syrup
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 ounces bittersweet chocolate, finely chopped
  • 2 tablespoons coconut oil
  • Cocoa powder, for coating
Instructions
  1. Place the dark chocolate in a heatproof bowl set over a saucepan of simmering water. Stir constantly until the chocolate is melted and smooth.
  2. Remove the bowl from the heat and stir in the heavy cream, corn syrup, vanilla extract, and salt. Stir until well combined.
  3. Transfer the mixture to a 9x13 inch baking dish and refrigerate for at least 2 hours, or overnight.
  4. Line a baking sheet with parchment paper.
  5. Using a small spoon or melon baller, scoop the chocolate mixture into 1-inch balls. Place the balls on the prepared baking sheet and freeze for at least 30 minutes.
  6. While the truffles are freezing, make the chocolate ganache. Place the bittersweet chocolate and coconut oil in a heatproof bowl set over a saucepan of simmering water. Stir constantly until the chocolate is melted and smooth.
  7. Remove the bowl from the heat and let cool for 5 minutes.
  8. Dip the frozen truffles in the chocolate ganache, then roll them in cocoa powder.
  9. Place the truffles on a serving plate and refrigerate for at least 1 hour before serving.
