Sweet Snap Pea and Mozzarella Skewers

Ingredients
  • 1 pound sweet snap peas
  • 1/2 cup cherry tomatoes
  • 1/2 cup bocconcini mozzarella, cut into 1/2-inch pieces
  • 1/4 cup fresh basil leaves
  • 1/4 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
Instructions
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, combine the snap peas, tomatoes, mozzarella, basil, olive oil, balsamic vinegar, oregano, salt, and pepper.
  4. Toss to coat.
  5. Thread the vegetables and cheese onto skewers.
  6. Place the skewers on the prepared baking sheet.
  7. Bake for 15-20 minutes, or until the vegetables are tender and the cheese is melted.
