Ingredients
  • 1 cup shelled edamame
  • 1/2 cup tahini
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup crumbled feta cheese
Instructions
  1. Bring a pot of salted water to a boil and add the edamame.
  2. Cook for 3-5 minutes, or until the edamame is tender.
  3. Drain the edamame and rinse with cold water.
  4. In a food processor, combine the edamame, tahini, lemon juice, garlic, olive oil, salt, and pepper.
  5. Process until smooth and creamy.
  6. Transfer the dip to a serving bowl and top with the parsley, cilantro, and feta cheese.
  7. Serve with pita chips, crackers, or vegetables.
