Ingredients
1 cup shelled edamame
1/2 cup tahini
1/4 cup lemon juice
2 cloves garlic, minced
1/4 cup extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh parsley
1/4 cup chopped fresh cilantro
1/4 cup crumbled feta cheese
Instructions
Bring a pot of salted water to a boil and add the edamame.
Cook for 3-5 minutes, or until the edamame is tender.
Drain the edamame and rinse with cold water.
In a food processor, combine the edamame, tahini, lemon juice, garlic, olive oil, salt, and pepper.
Process until smooth and creamy.
Transfer the dip to a serving bowl and top with the parsley, cilantro, and feta cheese.
