Ingredients
  • 1 cup dried chickpeas, soaked overnight

  • 3 cloves garlic, minced

  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Garnish: paprika, fresh parsley, and olive oil
Instructions
  1. Rinse the chickpeas and add them to a large pot with the baking soda.
  2. Cover with water and bring to a boil.
  3. Reduce heat to low and simmer for 1-2 hours, or until the chickpeas are soft.
  4. Drain the chickpeas and reserve the cooking liquid.
  5. In a food processor or blender, combine the chickpeas, garlic, tahini, lemon juice, olive oil, cumin, salt, and pepper.
  6. Process until smooth and creamy, adding some of the reserved cooking liquid if needed.
  7. Transfer the hummus to a serving bowl and garnish with paprika, parsley, and olive oil.
