Citrus-Marinated Shrimp Skewers
These Citrus-Marinated Shrimp Skewers are the perfect summer appetizer or main course. The shrimp is marinated in a flavorful blend of citrus juices, olive oil, garlic, oregano, and spices, then grilled to perfection. The inspiration for these Citrus-Marinated Shrimp Skewers came to me on a recent trip to Mexico. I was dining at a small restaurant on the beach, and I ordered a plate of grilled shrimp. The shrimp was delicious, but I couldn't help but think that it would be even better if it were marinated in a citrus juice blend. When I got back home, I experimented with different citrus juices and spices until I came up with the perfect marinade. These Citrus-Marinated Shrimp Skewers are now one of my favorite summer recipes.

Ingredients
  • 1 pound shrimp, peeled and deveined
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lemon juice
  • 1/4 cup fresh lime juice
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 wooden skewers
Instructions
  1. In a large bowl, combine the orange juice, lemon juice, lime juice, olive oil, garlic, oregano, salt, and pepper.
  2. Add the shrimp to the bowl and toss to coat.
  3. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
  4. Preheat your grill to medium-high heat.
  5. Soak the wooden skewers in water for at least 10 minutes.
  6. Thread the shrimp onto the skewers.
  7. Grill the skewers for 2-3 minutes per side, or until the shrimp is cooked through.
  8. Serve immediately with your favorite dipping sauce.
