2 medium zucchinis, cut into 1-inch pieces
1 medium eggplant, cut into 1-inch cubes

16 cherry tomatoes
1 teaspoon plus 2 tablespoons extra virgin olive oil
1 teaspoon plus 1/2 cup minced fresh parsley
1 teaspoon plus 1/4 teaspoon dried oregano
1/2 teaspoon salt, plus more to taste
1/4 teaspoon freshly ground black pepper
Instructions
Preheat grill or grill pan to medium-high heat.
In a large bowl, combine vegetables, 1 tablespoon oil, 1 teaspoon parsley, 1 teaspoon oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Toss to coat.
Thread vegetables onto skewers, alternating colors and shapes.
