Cheesy Whole-Wheat Quesadilla
This quesadilla is packed with protein and fiber, and is a great way to get your daily dose of fruits and veggies.

Ingredients
- 2 whole wheat tortillas
- 1/2 cup cooked black beans
- 1/2 cup cooked brown rice
- 1/2 cup chopped bell peppers
- 1/4 cup chopped onions
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded cheese (Mexican blend or cheddar)
- 2 tablespoons salsa
- 1 tablespoon guacamole
Instructions
- Heat a large skillet over medium heat.
- Place one tortilla in the skillet and cook until browned on one side, about 2 minutes.
- Flip the tortilla and sprinkle half of the beans, rice, bell peppers, onions, cilantro, cheese, salsa, and guacamole over the tortilla.
- Fold the tortilla in half and cook until the cheese is melted and the quesadilla is golden brown, about 2 minutes per side.
- Repeat steps 2-4 with the remaining tortilla and ingredients.
