Ingredients
  • 2 whole wheat tortillas
  • 1/2 cup cooked black beans
  • 1/2 cup cooked brown rice
  • 1/2 cup chopped bell peppers
  • 1/4 cup chopped onions
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded cheese (Mexican blend or cheddar)
  • 2 tablespoons salsa
  • 1 tablespoon guacamole
Instructions
  1. Heat a large skillet over medium heat.
  2. Place one tortilla in the skillet and cook until browned on one side, about 2 minutes.
  3. Flip the tortilla and sprinkle half of the beans, rice, bell peppers, onions, cilantro, cheese, salsa, and guacamole over the tortilla.
  4. Fold the tortilla in half and cook until the cheese is melted and the quesadilla is golden brown, about 2 minutes per side.
  5. Repeat steps 2-4 with the remaining tortilla and ingredients.
